Who knew that an unassuming building in the heart of Rome housed a culinary treasure? For weeks, I walked past San Baylon Ristorante & Cocktail Bar without a second glance. It wasn’t until a friend invited me to dine there that I discovered the hidden gem within the historic walls of the Palazzo Ripetta Hotel.

A Feast for the Senses

Stepping into San Baylon is like stepping back in time. The wood-paneled dining room, adorned with vintage photos, evokes a sense of history and elegance. Sunlight streams through the charming courtyard, where lemon trees and cascading fountains create a tranquil oasis. It’s the perfect spot to unwind after a day of exploring the bustling city.

Chef Marco Ciccotelli’s menu is a celebration of Italian heritage, featuring fresh, seasonal ingredients sourced from local farms. Our culinary journey began with a basket of freshly baked bread, accompanied by creamy buffalo cheese topped with crispy olives. The aroma alone was enough to make my mouth water. Gary, my dining companion, opted for the Risotto Agli Asparagi Bianchi, a creamy risotto infused with the subtle sweetness of white asparagus and the deep, rich flavor of 120-month-aged Parmigiano Reggiano. Each bite was an explosion of umami, a symphony of textures and flavors.

I, on the other hand, was drawn to the Bottoncini di pasta fresca ripieni di faraona e piselli. These delicate ravioli, filled with slow-cooked guinea fowl and peas, were bathed in a fragrant broth. The succulent poultry, paired with the fresh pasta and a sprinkle of micro-greens, was a culinary masterpiece.

A Sweet Finale

Our meal concluded with Vanilla e Caramel Millfoil, a delicate pastry that showcased the artistry of pastry chef Giuseppe Solfrizzi. The flaky, buttery pastry was layered with light vanilla cream and topped with a scoop of vanilla gelato and ribbons of caramel. The perfect balance of sweet and salty made it a fitting end to our culinary journey.

San Baylon is more than just a restaurant; it’s an experience. The attentive service, the elegant ambiance, and the delectable food create a memory that will stay with me for years to come. Each dish was a testament to the passion and skill of the chefs, showcasing the best of Italian cuisine.
